I have read the manual, but can't find how to include up to date NATracks in a flightplan.

Would someone please direct me to the documentationm,or instruct me how to use the NATracks?

There's no such a feature. People can hardly fly "real" NATs because they change twice a day, and the typical time when you do flight simulation is when there is no traffic in real life.

Vroute allows you to create a flight plan with NAT waypoints in it, and then fly, calculate fuel, do FMC exports etc. - but it can't tell the difference between a flight plan based on real life NAT from that day and any other sequence of waypoints over the Atlantic.

Note that in premium version the real life NATs for that day are shown on the map.
